This bicycle wheel-shaped cake, created in 1909, is a tribute to the Paris-Brest-Paris bicycle race. It became popular with cyclists, especially because of its energy and caloric value and its intriguing name. Today, it is one of the most famous French pastries abroad, especially for its difficult pronunciation (“pah-ree-breast”). Between these two circles of choux dough is filled a luscious hazelnut cream and can be decorated with sprinkled almonds and icing sugar.
This iconic dessert, also existing in eclair-like shape, is prepared in the GELPAT laboratory according to the traditional recipe with carefully selected local ingredients.
