Although the religieuse is one of the most famous French pastries, it was created in an Italian café in Paris 200 years ago. It is so named because of the color of the pastry, which, covered with a glaze, reminded the dress of the nuns in the convents.
This iconic recipe is elaborated in GELPAT’s laboratory with carefully selected local ingredients. The religieuse, a sister of the éclair, has a similar composition with two round choux pastries placed one on top of the other, filled with a pastry cream and recovered with a glaze. The top dough, smaller, is supposed to represent the head attached to the body with a buttercream. Usually filled with chocolate, coffee or vanilla flavored pastry cream it can also be enhanced with other flavors.
Our artisanal know-how guarantees an authentic flavor and aspect in the respect of the strictest sanitary standards. We deep freeze our religieuses at -30°C to ensure artisans with an adapted shelf-life.
